Limoncello, Ernst variant

Ingredients

13 organic lemons
7.5 dl unflavoured vodka
5 cups water
2.5 cup sugar

Do this

1. Rinse the lemons well. Peel them with a vegetable peeler but be careful with that as little of the white shell is included as possible, when the ger a bitter taste. Place the shells in a jar with lid.

2. When the lemons are peeled, divide them in half and squeeze out all the juice into the jar with shells. Then pour over the brandy.

3. Let the mixture stand for one week, preferably in a dark room. Mixing can be practically how long you want, However, should you strain away the shells after a time.

4. After the first storage: boil the water and sugar and let the syrup cool completely. Pour together the syrup with lemon- and brandy mixture and mix well. Let stand for another week.

5. Strain the limoncello and pour into sterilized bottles.
