Fried salt herring with onion sauce

4 portions

4 large or 8 small thickened fillets
1/2 cups flour
1 organic eggs
1/2 dl breadcrumbs
1/2 bundle chives (garnering)

Onion sauce:
4 yellow onions
2 tablespoons butter
2 tbsp plain flour
3 cups milk (red)
1 cup heavy cream
Muskotnöt
Salt and white pepper

Do this:
Turn drained fillets in flour, beaten egg and finally the breadcrumbs
Fry golden brown on low heat
Serve with onion sauce and boiled potatoes

Onion sauce:
Peel and slice the onion and sweat it in the frying pan, soft and shiny
Melt butter in pan and dust with flour
Whisk until the flour is dissolved
Add milk and cream and whisk then
Simmer on low heat 10 mine
Make sure it does not burn on the bottom
Add the onion and season with nutmeg and S&P
