4 poster portions

250 gr butter
3 egg yolks
2 tablespoons of apple cider vinegar
1/2 lemon (juice)
salt and pepper
Cayennepeppar (knivsudd)

Do this:
Melt the butter over low heat
Beat yolks, lemon and vinegar in a saucepan
Place the pan in a water bath
Beat until the egg yolks have thickened
Whisk gently onto the butter into the egg mixture
Taste with S&P, cayenne pepper
